Left over pie
I struggle with autumn, I really do. And I know some of you have shared with me that you struggle with autumn too. However, as well as the beautiful colours of our native trees and the plentiful hedgerows of juicy brambles and sloes, there is one very good thing that I just adore about autumn…. Pie. This is the season of plump pies and delectable puddings, sumptuous stews, delicious dumplings and all the fattening, delicious, glutenous foods that my hips and tummy say “no” to ….and I say
Yes!
Yes!
Yes!
This is the season for warming comfort food, thick spicy soups with crusty bread and mince and dumplings. But, best of all, I do love a good savoury pie.
And this is a photo of last night’s pie that I made for Kelsey and me. It’s one of my favourite recipes…and is called, what’s-left-over-in-the-fridge pie.
What’s-left-over-in-the-fridge pie comes in a variety of stunning shapes and flavoursome flavours and last night’s concoction included the following: Left-over chicken, streaky bacon, a huge leek, cream, white wine, garlic, some flaky pastry that needed used up and then the spice cupboard offered up paprika, Worcestershire sauce, stock cubes, sage and I can’t remember the rest. I found some broccoli that had seen better days and a few new [ish] potatoes and voila.
It was totally delicious…even the teenager (who doesn’t like leeks or wine or cream) said so!
